Recipe: Broccoli, Black Olive, Feta
and Bacon Salad

A simple, Greek influenced salad that combines bacon and broccoli
with sunshine ingredients such as Feta cheese and black olives.

Ingredients

1 bunch broccoli
150g bacon lardons or pancetta
3 tbsp black olives, chopped
200g block Feta cheese, cubed
¾ bag Lasting Leaf Sweet Leaf & Carrot

Dressing
1 tsp Dijon mustard
2 tbsp mayonnaise
1 tbsp extra virgin rapeseed oil

Method

Remove the florets from the broccoli and place into a pan of boiling water. Cook for 7 – 10 minutes until soft, drain and set aside.

Place the bacon or pancetta into a pan and cook over a medium heat until crunchy.

To make the dressing, combine all ingredients and mix together.

To assemble, mix all of the ingredients together in a serving dish, add the dressing and toss well to coat.
