Recipe: Pear and Roquefort Salad
with Honey and Ginger

The classic combination of pear and Roquefort has been given a taste
makeover with the introduction of a sweet honey and ginger dressing.

Ingredients

2 ripe Conference pears
8 sundried tomatoes
¾ bag Lasting Leaf Iceberg lettuce
75g Roquefort cheese

Dressing
2 tbsp runny honey
½ tsp stem ginger, finely chopped
1 tbsp stem ginger syrup
1 tbsp extra virgin olive oil

Method

Peel the pears, remove the stalk and quarter. Cut away the core.

Cut each quarter into half lengthways and set aside. Chop the tomatoes.

Place the Lasting Leaf Iceberg lettuce into a serving bowl and mix the pears and sundried tomatoes through. Crumble the Roquefort over the top and gently toss.

To prepare the dressing, place all the ingredients into a small bowl and whisk to combine.

Pour over the salad and toss.
